DAN COMPLEX, DAN BEST line

Functional blends for hydration through absorption, used in the manufacture of luncheon meat and sausages: finely, medium and coarsely minced. The recommended absorption is 30-50%. The DAN COMPLEX and DAN BEST brines guarantee good binding of the finished product, reduction of losses during heat processing, stable consistency, reduction of deposits during storage, they speed up the colouration, fix the colour, reduce negative oxidative changes, and bring out the meaty flavour of products. The blends contain: a mix of kappa and iota carrageenans, sodium and potassium phosphates, soya isolates and concentrates, animal proteins, modified starch, fibres as well as antioxidants and flavour enhancers.

Recommended dosage: from 3.0 to 5.0kg/ 100kg of brine
