Functional blends for brines used to inject and massage in the manufacture of luncheon meat, formed meats, and pasteurised and sterilised products. The recommended injection/absorption is 50 - 80%. DAN COOKED HAM HV, DANFOSAL, UNISOL LINE brines assure very good binding of the finished product, speed up coloration, reduce negative oxidative changes and bring out the meaty flavour of products. The blends contain: a mix of hybrid, kappa and iota carrageenans, sodium phosphates, soya isolate, animal proteins, modified starch as well as antioxidants and flavour enhancers.
    
Recommended dosage: from 4.0 to 7.0kg/ 100kg of brine
