Brines for enhanced and delicatessen meat

DAN CULINARY INJECT - functional phosphate blendes for injection brines used in the manufacture of enhanced meat. It improves the tenderness of meat, facilitates and shortens heat processing and brings out a unique flavour of roasted meat. The product is recommended for injecting meat at 10-20% (if a dripping tunnel is used, the injection may be increased up to 20-30%).

Recommended dosage: 2.0-4.0kg/100kg of brine

Note on application: The injected tenderloin or neck should be slightly plasticised in a tumbler. The ready intermediate product may be vacuum or MAC-packed. We also recommend the use of fruit obtained in the restructuring technology, which significantly boosts the attractiveness of products.
