DAN COOKED HAM, DAN WĘDZONKA EXTRA line

Functional blends for injection and massaging used in the manufacture of cooked and smoked meat made of ham and shoulder muscles. The recommended injection is 60-100%. DAN COOKED HAM and DAN WĘDZONKA EXTRA products assure very good binding of the finished product, speed up the curing process, reduce adverse oxidative changes, and bring out the meaty flavour of products. The blend contains: a mix of hybrid carrageenans, sodium and potassium phosphates, soy isolates, native and modified starch as well as antioxidants and flavour enhancers.

Recommended dosage: 6.0-7.5kg/100kg of brine
