DANGEL 7100 hydrocolloid preparations are mixtures of semi-refined carrageenans (kappa and iota) and other hydrocolloids such as: xanthan gum, gum karaya, cassia gum, tara gum, LBG, gellan gum and oat flour. They are widely used in the manufacture of homogenised meats where they stabilise consistency and improve the process water retention capacity.
The application of the DANGEL 7100 line preparations in the medium and coarsely minced sausages assure very good water retention and desired texture.
Good solubility in cold water, combined with small dosage (0.5-1.0% of the finished product) guarantees proper dispersion in brine and a product that is free of carrageenan deposits, so unwelcome by customers.
We offer the DANGEL 7200 Plus ACtiVe line - a special line of carrageenan preparations dedicated for sterilised products (of high F0 values).
The carrageenan preparations are intended for the manufacture of pet food.
